The water
Incline takes its name from the steep slopes above its source. Snowmelt seeps through granite and alpine meadow at about 2,500 metres and surfaces as a spring from a high cleft in the rock. We keep just enough of what the rock gives it for a smooth, balanced mouthfeel, and bottle it in clear glass so you can see exactly what you are pouring.
At the plant it passes through sand and activated carbon, micron filters and a reverse-osmosis membrane, has its minerals balanced to this water’s profile, and is disinfected with ozone and ultraviolet light before it is filled in a clean room. The batch report is available on request.
Serving
Serve cool, at 8 to 12 °C, straight from the bottle at the table. Keep it out of direct sunlight.

The spring is checked at first light every morning, before anything is drawn.
